If you are looking for a yummy recipe to help your little one gaining some weight, you might want to try this pancake one!

The recipe is vegan (no eggs, no dairy), super soft and perfect for little palates. It can be served to babies starting from 6 months of age: simply skip the maple syrup and add an extra super ripe banana. The more brown dots on the skin, the better as it means that it is super sweet!! In this way you will add natural sweetness to the recipe without adding any sweetener.

I receive a lot of questions from parents worried about their babies or kids not gaining enough weight. My first reply is to always check with your health care provider/pediatrician your baby’s growth curve: every baby is different and grows at a different pace. Also, you need to take in consideration DNA: if your baby comes from a family of skinny and petite people, it might be that he/she will be growing in an healthy way but below the average.

There is no magic food that in few weeks will transform your little baby into a chubby giant one 🙂 But there are plenty of foods that can help your little one gaining weight in an healthy way. When I say “healthy way” I mean foods that are high both in calories and in nutrients. To give you an example: you can gain weight eating french fries all day…but that is not good weight, it’s saturated fats. OR…you can gain healthy weight eating almonds, avocado, salmon,eggs, nuts, seeds every day. And that combo of good high nutients/high calories foods will make you gain weight and energy at the same time. You will gain weight, feeling better too!

I decided to start a new series of baby recipes dedicated to “healthy weight gain” and today’s pancakes are the first one 🙂

Avocado + almond meal + hemp seeds + coconut oil are all high calories and high nutrients foods that will help your little one gaining healthy weight.

Also, the pancakes are so soft that can be offered in tiny pieces to little babies, perfect if you are following the baby led weaning method.

The procedure is super simple and I used a food processor to make it even faster 🙂

In a food processor add all the ingredients: coconut milk + avocado + banana + almond meal + flour + hemp seeds + cinnamon + salt + baking soda + baking powder + maple syrup (skip the maple syrup if serving the pancakes to babies under 12 months) + coconut oil.

Blend for 1 minute to obtain a smooth pancake batter.

Heat a small pan at medium heat for 30 sec and pour 1 Tbsp of mix for each pancake. Let it cook for more or less one minute. When you will see the sides of the pancakes getting firm and gold, flip on the other side and finish cooking for another minute or less. Stack the pancakes one on top of the others to keep them warm and fluffy. Serve warm.

You can add some berries to the mix for a more fruity flavor or, for older kids, some chocolate chips 🙂

You can freeze the leftover pancakes for future breakfast. Tip: divide the pancakes with a layer of parchment paper so that you will be able to thaw only one or few of them and not the whole quantity. I usually place the frozen pancake in the microwave for 30 sec and than into the toaster for 1 min.

Ingredients

  • 3/4cupall purpose flour
  • 1/4cupsalmond meal
  • 2Tbspmaple syrup
  • 1tspbaking powder
  • 1/2tspbaking soda
  • 1/4tspsalt
  • 1/4tspcinnamon or nutmeg
  • 1avocado
  • 3/4cupcoconut milk
  • 1ripebanana
  • 2Tbspcoconut oil
  • 1Tbsphemp seeds

Instructions

  1. In a food processor add all the ingredients: coconut milk + avocado + banana + almond meal + flour + hemp seeds + nutmeg + salt + baking soda + baking powder + maple syrup + coconut oil.
